The BEST Breakfast Burrito

Amazingly, here’s week two of Eggcellent Sunday.  Who knew I could actually do something two weeks in a row – there’s hope for me yet!

This recipe started with my husband cooking weekend breakfast for the kids.  It’s called Eggy Cheesy Burritos.  And it’s GREAT!

Ingredients:

  • Vegetable oil
  • Two sausage patties – we use Morningstar Farms veggie patties
  • Butter
  • Four beaten eggs (preferably laid yesterday by your hens)
  • Salt and pepper
  • Grated cheddar cheese
  • Your favorite green chili – ours is Nanita’s
  • Two large or three small flour tortillas
  • Your favorite red salsa – ours is Hell On The Red or Frontera’s Chipotle Salsa

Here goes…

Cook the sausage most of the way, then cut it up and finish cooking.  That way all the edges are crispy

Put scrambled eggs in the skillet - add salt and pepper and start moving it all around.

Put a pat of butter in the skillet and add the beaten eggs – throw in some salt and pepper and start moving it all around.

Once the eggs are close but not quite set, add the sausage, some green chili and the cheese.  Mix it all up and cook till it's done.

Top the tortillas (I threw mine in the toaster for a minute to get them pliable) with the egg mixture.

Look good, huh?  But your not done yet.

Roll ’em up.  Looks good, huh? But you’re not done yet…

Grill them!  I have a Cuisinart Griddler, but a grill pan would work just fine, too.

And now, a postscript…

I know I’ve said I’m a bad photographer, but this is an exceptionally bad series of photos. Here’s my excuse… After I had gotten all the ingredients together, the skillet heating and the first photo taken, Keela the dog comes in the back door with a BIG FAT mouth. Something had bitten her and it had swollen up very fast.  Her head went from looking like a small pit-bull mutt to a large shar-pei in twenty minutes.  The entire cooking session was done with me running to the bathroom to get the Benadryl, going to the computer to see how much to give her, and constantly checking on her.  I’m glad to report the swelling stopped just before it completely closed her eyes (for me that means head to the emergency vet) and she is now resting somewhat comfortably at my feet.

    • Oh, yes, potatoes! That’s a good addition. I’ve used tater tots in those with awesome results – a nice crunchy row of tots down the middle of the burrito is very, very yummy. Thanks for reminding me to throw those in!
