Sandwich Like Daddy’s

When the kids were little, Very Excellent Husband Don would take them to McDonald’s on Sunday morning so I could sleep in.

The kids would get pancakes, VEH Don would get an Egg McMuffin without the sausage and I would get some shut eye. Frankly, I always thought I got the best part of the deal.

Anyway, somehow the kids started calling that Egg McMuffin a “Sandwich Like Daddy’s” and we started making them at home.  A family food classic was born.

They’re obviously crazy easy to make.  We use Thomas’ English Muffins, Morningstar Farms veggie sausage, cheddar cheese and, of course, eggs from the hens.

Toast the muffins.  I like whole wheat, Don sticks with the original white.

Fry up the sausages, slice the cheese.  Take a photo from the worst angle ever.

Gather a few fresh eggs.   Fry them up over easy - you're gonna love that runny yolk.

Stack and eat!   Here’s one more look before you run to the kitchen and make one yourself…
