Last week I shared Thomas Keller’s Awesome Egg Sandwich with cheese, lettuce, mayo and bacon. Now, Mr. Keller’s one of the best chefs in the world. I am but a lowly Chicken Mama. BUT, I know what I like.
I don’t eat bacon, haven’t since I was twenty-one. Since I now look a pig in the eye every morning and receive great pleasure from doing so, the odds that I’m going to start eating bacon are…slim.
However, I do like a good sandwich. So I took the honorable Mr. Keller’s sandwich and made it my own. To complicate food matters even more, Very Excellent Husband Don and I have a slightly different idea of what the best egg sandwich should be. Oh my. Here’s two veggie versions of an awesome sandwich.
My Egg Sandwich
- 2 eggs, preferably plucked from a nesting box earlier in the day
- 2 spears asparagus, cut into one inch pieces
- Good cheese, grated. I used gouda. Fontina is my favorite. Swiss is Don’s.
- Sandwich bread, whole wheat or sourdough – your choice
- Olive oil, butter, mayo, salt and pepper
Toss the asparagus with olive oil, salt, and pepper. Roast it in a 400 degree oven. It takes about 25 minutes. Toss at least once while roasting. I had a few extra spears so I roasted those too!
Toast the bread. I like to do mine in the Griddler with olive oil, salt and pepper. Don likes his in the toaster oven with butter. Your pick.
Pile the asparagus on one side of the toast (with mayo if you like) and the grated cheese on the other side. Stick the cheese side in the broiler and heat until it’s bubbly.
While the cheese is melting, fry the eggs. In butter, with salt and pepper sprinkled on top. A runny yolk is very important. Slide the egg onto the asparagus and top with the hot, cheesy toast.
I like to eat mine straight off the cutting board. There’s something about sopping up the egg yolk off the wood that’s deeply satisfying.
There you have it. It’s everything a great sandwich should be. It’s easy to make, it tastes wonderful, it can be eaten standing up at the counter and it pairs well with a good beer. Enjoy!

Okay now your talking my language friend! Fontina cheese is a fave of mine as well. Being Italian we eat panini’s often around here. Since I’m not a meat eater mine are veggie based. I had a veggie and egg one for breakfast yesterday. Such a yummy combo eggs and veggies, love them anytime of the day. I haven’t tried egg with asparagus but after reading your recipe will definitely give it a try next time.
